Low-Carb Shepherd's Pie With Mushrooms & Cauliflower Mash

Ingredients
  

  • 2 pounds turkey ground
  • 1 tbsp ghee grass-fed
  • 2 garlic cloves minced
  • 1/3 cup baby carrots chopped
  • 1 cup mushrooms
  • 1 cup green beans fresh or frozen
  • 1 yellow onion small, chopped (1/2 cup)
  • 2 tbsp tomato paste
  • 1 1/2 tbsp balsamic vinegar
  • 1 cup vegetable broth low sodium
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 tbsp italian seasoning
  • 1 tsp thyme dried
  • 1/2 tsp tapioca flour
  • 1 leek large, diced finely
  • 2 tbsp nutritional yeast
  • fresh parsley for garnish
Cauliflower Mash Topping
  • 3 12 oz bags cauliflower rice or 1 head cauliflower
  • 1 tbsp ghee grass-fed
  • 2 tbsp coconut milk canned, unsweetened
  • 1 tsp garlic powder
  • 1 tsp salt more or less to taste
  • 1/2 tsp black pepper cracked
  • 1 1/2 tbsp chives fresh or dried

Method
 

  1. Preheat the oven to 350 degrees F.
  2. To prepare the meat mixture, in a nonstick frying pan over medium heat melt the ghee and start cooking the diced onion and minced garlic. 
  3. Stir in the diced mushrooms and carrots and cook for about 5 minutes. 
  4. Then stir in the green beans and ground turkey. 
  5. Season with salt and pepper to taste, Italian seasoning, dried thyme, and cook for about 10 minutes. 
  6. Stir in the balsamic vinegar, flour, tomato paste, diced leek, vegetable broth, and nutritional yeast. 
  7. Cook for about 5 more minutes and then pour the mixture into a casserole dish.
  8. To make the mashed cauliflower in a saucepan over medium heat bring the cauliflower florets to a boil. Cook for about 10-15 minutes. 
  9. Place the cooked cauliflower in a blender, add the ghee, coconut milk, garlic powder, salt and pepper to taste, and diced chives. Blend until smooth and spread the cauliflower mash on top of the cooked meat. 
  10. Bake in a heated oven at 350 F or 180 C degrees for about 20 minutes. 
  11. Serve and enjoy with freshly chopped parsley if desired.
