Meatless Tacos in Cabbage Shells

Meatless tacos in veggie shells are super yummy and a great low-carb, gluten-free option for taco Tuesday!

Ingredients
  

  • 1 green cabbage head, medium
  • 1/2 tsp salt divided
  • 3 tbsp avocado oil divided
  • 1 onion medium, halved and sliced
  • 3 garlic cloves minced
  • 1 jalapeno seeded if desired, minced
  • 2 tsp cumin ground
  • 1 carrot medium, shredded
  • 1/3 cup cilantro fresh, chopped
  • 1 green onion stalk, sliced
  • 1 tbsp rice vinegar
  • 1 1/2 cup red beans cooked
  • 1 1/2 cup cherry tomatoes chopped

Instructions
 

  • In a large skillet over medium heat, warm the avocado oil and start cooking the diced onion, scallion, jalapeno and shredded carrot. 
  • Stir in 1 cup of shredded cabbage and the cooked red beans.
  • Season with salt and pepper to taste, cumin powder, and rice vinegar. 
  • Cook for about 15-20 minutes and serve the meatless tacos in cabbage leaves. 
  • Serve with cilantro and cherry tomatoes.
