Meatless Tacos in Cabbage Shells
Meatless tacos in veggie shells are super yummy and a great low-carb, gluten-free option for taco Tuesday!

- 1 green cabbage head, medium
- 1/2 tsp salt divided
- 3 tbsp avocado oil divided
- 1 onion medium, halved and sliced
- 3 garlic cloves minced
- 1 jalapeno seeded if desired, minced
- 2 tsp cumin ground
- 1 carrot medium, shredded
- 1/3 cup cilantro fresh, chopped
- 1 green onion stalk, sliced
- 1 tbsp rice vinegar
- 1 1/2 cup red beans cooked
- 1 1/2 cup cherry tomatoes chopped
In a large skillet over medium heat, warm the avocado oil and start cooking the diced onion, scallion, jalapeno and shredded carrot.
Stir in 1 cup of shredded cabbage and the cooked red beans.
Season with salt and pepper to taste, cumin powder, and rice vinegar.
Cook for about 15-20 minutes and serve the meatless tacos in cabbage leaves.
Serve with cilantro and cherry tomatoes.
