Low-Carb Shepherd's Pie With Mushrooms & Cauliflower Mash

Ingredients
  

  • 2 pounds turkey ground
  • 1 tbsp ghee grass-fed
  • 2 garlic cloves minced
  • 1/3 cup baby carrots chopped
  • 1 cup mushrooms
  • 1 cup green beans fresh or frozen
  • 1 yellow onion small, chopped (1/2 cup)
  • 2 tbsp tomato paste
  • 1 1/2 tbsp balsamic vinegar
  • 1 cup vegetable broth low sodium
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 tbsp italian seasoning
  • 1 tsp thyme dried
  • 1/2 tsp tapioca flour
  • 1 leek large, diced finely
  • 2 tbsp nutritional yeast
  • fresh parsley for garnish

Cauliflower Mash Topping

  • 3 12 oz bags cauliflower rice or 1 head cauliflower
  • 1 tbsp ghee grass-fed
  • 2 tbsp coconut milk canned, unsweetened
  • 1 tsp garlic powder
  • 1 tsp salt more or less to taste
  • 1/2 tsp black pepper cracked
  • 1 1/2 tbsp chives fresh or dried

Instructions
 

  • Preheat the oven to 350 degrees F.
  • To prepare the meat mixture, in a nonstick frying pan over medium heat melt the ghee and start cooking the diced onion and minced garlic. 
  • Stir in the diced mushrooms and carrots and cook for about 5 minutes. 
  • Then stir in the green beans and ground turkey. 
  • Season with salt and pepper to taste, Italian seasoning, dried thyme, and cook for about 10 minutes. 
  • Stir in the balsamic vinegar, flour, tomato paste, diced leek, vegetable broth, and nutritional yeast. 
  • Cook for about 5 more minutes and then pour the mixture into a casserole dish.
  • To make the mashed cauliflower in a saucepan over medium heat bring the cauliflower florets to a boil. Cook for about 10-15 minutes. 
  • Place the cooked cauliflower in a blender, add the ghee, coconut milk, garlic powder, salt and pepper to taste, and diced chives. Blend until smooth and spread the cauliflower mash on top of the cooked meat. 
  • Bake in a heated oven at 350 F or 180 C degrees for about 20 minutes. 
  • Serve and enjoy with freshly chopped parsley if desired.
