Lemon Herb Quinoa Salad With Spinach, Walnuts, and Strawberries

This recipe is packed with vitamins and nutrients. And it will provide you with plenty of protein, good fats, and fiber to keep you full and feeling good for a long time.

  • 1 1/2 cups quinoa cooked
  • 1/4 cup walnuts chopped
  • 4-5 fresh strawberries sliced
  • 2 cups baby spinach
  • 1/3 cup parsley chopped
  • 1 english cucumber seeded and chopped
  • 1 tomato chopped

For The Dressing

  • 1/4 cup olive oil extra virgin
  • 1 tsp honey
  • 2 tsp dijon mustard
  • 1 lemon zest and juice
  • salt and pepper to taste


  • In a large mixing bowl place in the cooked quinoa, diced tomatoes, diced cucumber and baby spinach. 
  • Mix until combined and stir in the chopped parsley.
  • In another smaller bowl mix the olive oil, salt and pepper to taste, dijon mustard, zest and juice of a lemon and honey. Mix until combined.
  • Pour the dressing on top of the salad and tossed until mixed.
  • Garnish the salad with chopped walnuts and sliced strawberries. 
  • Enjoy.
