Lemon Herb Quinoa Salad With Spinach, Walnuts, and Strawberries
Ingredients
- 1 1/2 cups quinoa cooked
- 1/4 cup walnuts chopped
- 4-5 fresh strawberries sliced
- 2 cups baby spinach
- 1/3 cup parsley chopped
- 1 english cucumber seeded and chopped
- 1 tomato chopped
For The Dressing
- 1/4 cup olive oil extra virgin
- 1 tsp honey
- 2 tsp dijon mustard
- 1 lemon zest and juice
- salt and pepper to taste
Instructions
- In a large mixing bowl place in the cooked quinoa, diced tomatoes, diced cucumber and baby spinach.Â
- Mix until combined and stir in the chopped parsley.
- In another smaller bowl mix the olive oil, salt and pepper to taste, dijon mustard, zest and juice of a lemon and honey. Mix until combined.
- Pour the dressing on top of the salad and tossed until mixed.
- Garnish the salad with chopped walnuts and sliced strawberries.Â
